Blueberry Coconut Smoothie

Chef Keith Snow from HarvestEating.com creates a delicious and healthy blueberry coconut smoothie with milk, blueberries, and almonds.

Blueberry Coconut Smoothie Ingredients:

1/2 c. blueberries
1/4 c. sliced almonds
1/4 c. coconut (unsweetened)
2 c. milk

Blend with an immersion blender until smooth.

Yummy and Healthy Smoothie!

This healthy smoothie blends the antioxidant properties of blueberries with the raw goodness of unsweetened coconut.  Adding almonds strengthens the protein characteristics of the smoothie.  The milk also adds protein.

In my mind, there is too much milk in this smoothie to make it very thick.  If I were making it myself, I’d add some ice cubes during the final part of the blending process to make it a bit thicker.

Because the video maker is using an immersion blender for this Blueberry Coconut Smoothie, you’d need to start with crushed ice, since an immersion blender won’t handle ice cubes well.

Immersion blenders are great for use in smoothies where the ingredients are small and ice cubes aren’t needed.  Thick smoothies made from small frozen berries, such as blueberries, blackberries, raspberries, and cherries.  Even sliced frozen strawberries will blend well with an immersion blender.
